Job Description
General Responsibilities
This position description does not imply that these are the only duties to be performed. Employees may be required to perform job-related duties assigned by their supervisor or management, adhering to the Company's Safety, Quality, and Environmental Standards.
Assists with food preparation according to assigned sections, complying with recipes and food safety standards provided by the Company.
* Follow company guidelines and superior's instructions to maintain high standards of food production and presentation.
* Adhere to food safety and sanitation standards in compliance with HACCP protocols.
* Perform all duties efficiently and technically correct, following company policy, ship's rules, and training manuals to achieve high standards and total guest satisfaction.
* Responsible for the decoration of all buffets.
* Capable of performing vegetable, ice, and cheese carvings in front of passengers during presentations.
* Ensure availability and proper condition of decorations.
* Maintain cleanliness in the designated section of the galley.
* Comply with public health requirements for sanitary work.
* Follow instructions from the Executive Chef, Sous Chef, or Senior Chef de Partie.
* Maintain respectful and professional communication with the Executive Chef and assistants.
Specific Responsibilities
* Maintain cleanliness of workstation according to Mystic Cruises standards.
* Practice good workplace standards and enforce HACCP/SHIPSAN principles.
* Familiarize with all galley departments, understanding relationships and interactions.
* Check workstation before each shift using a checklist.
* Minimize food spoilage and utilize food surpluses.
* Work overtime if requested.
* Discard potentially hazardous food that does not meet company requirements.
* Comply with personal hygiene requirements.
Perform additional duties set by company policies or management not included in the job description.
Financial Responsibilities
* Minimize food spoilage and utilize food surpluses.
* Communicate with supervisors to minimize leftover food and control food costs.
* Be cost-conscious with cleaning materials and consumables.
* Maintain and respect Company property.
Sanitation Requirements
* Handwash before duty and when hands become contaminated, enforcing handwashing standards.
* Ensure departmental personnel follow personal hygiene requirements.
* Prevent carrying cigarettes or cell phones on duty.
* Use HACCP Flow Charts prescribed by the Food Safety Management Team.
* Use a calibrated food thermometer to ensure safe temperatures of potentially hazardous food.
Safety & Discipline Responsibilities
* Understand and implement the Company's Mission Statement.
* Wear prescribed uniform and name badge, complying with regulations regarding tattoos and body decorations.
* Participate in all emergency drills, carrying a personal emergency card, and understanding emergency duties.
* Use Personal Protective Equipment in work areas at all times.
* Perform In Port Manning duties as scheduled by Company policy.
Qualifications
Education/Position Requirements
* Knowledge of USPH/SHIPSAN Sanitation Standards and HACCP controls.
* Medically and physically fit to work in food preparation areas.
* Ability to work in a harmonious team environment.
* Knowledge of buffets, decoration, and showpieces.
* Good knowledge of international cuisine.
* Basic education requirements.
* Quality control skills.
* At least 3 years of practical kitchen experience; one year on a cruise ship preferred.
* Good command of English.
Team Communication and Meetings
* Check notice boards daily for information, attend all meetings and trainings.
Position Physical Requirements
* Regularly walk, use hands, reach, talk, hear, taste, or smell during duties.
* Occasionally lift and/or move up to 25 Kg.
* Specific vision abilities required include close and distance vision, colour vision, and depth perception.
* Participate in emergency lifesaving procedures and drills.
* Full use of arms and legs, and ability to receive and give instructions in emergencies.
* No visible tattoos in uniform in guest areas.
