Luciano, Pane Della Vita, is an Italian café centrally located in the heart of the enchanting Obidos with a full view of the magnificent Obidos Castle in Portugal. The café is part of the global business group of Bennet & Bernard Gastronomy & Hospitality, where the business owns cafes, restaurants and hotels. The global and diverse business house with fifteen years in operations is expanding further in Portugal with a chain of these specialized Italian cafes. Café Luciano is dedicated to offering an authentic Italian culinary experience. Our day-long menus feature the best of freshly baked breads and cakes, beloved Italian classics like pizzas and 'hero' sandwiches, organic pasta sourced from our own factory in Italy, alongside a selection of the finest coffees.
Café Luciano offers a unique opportunity to work in a historic and picturesque location, is the first of the subsequent outlets that will serve a diverse and appreciative clientele in Portugal. In this role, the chef works closely with a head chef to manage the authentic bread making and other baking requirements. You will supervise the quality, ensure efficient inventory, support the team, and make a significant impact on our guests' dining experiences.

Key Accountabilities
Bakery Operations :
Handle daily operations of the bakery section, ensuring a variety of high-quality breads, pastries, and other baked goods are produced. These breads and baked goods will be the primary offerings at the café, making items like sandwiches, and other savoury items.
Monitor the baking process, ensuring products meet the restaurant's standards for quality and presentation.
Coordinate with other pastry and kitchen staff to ensure a smooth workflow and timely production.
Kitchen Operations :
Prepare and cook high-quality Italian dishes following authentic recipes and modern techniques.
Supervise lower/ junior kitchen staff, fostering a collaborative and efficient work environment.
Ensure all dishes are prepared to the highest standards of quality, taste, and presentation.
Monitor and manage the kitchen's operational costs, optimizing efficiency without compromising quality.
Inventory Management :
Oversee inventory levels, ensuring the kitchen is adequately stocked with fresh and high-quality ingredients.
Conduct regular inventory checks, maintain accurate records, and manage supplier relationships.
Implement and manage inventory control procedures to minimize waste and reduce costs.
Coordinate with suppliers to ensure timely delivery of ingredients and bakery supplies.
Quality Checks :
Establish and maintain high standards for food safety, sanitation, and hygiene in compliance with health regulations.
Perform regular quality checks on ingredients, prepared dishes, and bakery products to ensure consistency and excellence.
Address any quality issues promptly, implementing corrective measures as needed.
Train kitchen staff on proper food handling, storage, and preparation techniques to uphold quality standards.
Qualification & Personal Skillset
Proven experience as a Bakery Chef.
Knowledge of traditional and modern Italian culinary techniques is an advantage.
Experience in inventory management and quality control within a kitchen environment.
Proficiency in managing bakery operations, with a solid understanding of baking techniques and processes.
Excellent teamwork, communication, and organizational skills.
Ability to work under pressure and in a fast-paced environment.
Strong attention to detail and commitment to excellence.
Working Conditions:
Must be able to work flexible hours, including evenings, weekends, and holidays.
Ability to stand for extended periods.
